Yorkshire Curd Tart or Cheese cake [minus the kefir grains Ad. Dominic] was possibly the forerunner
of the American Cheesecake. I include the recipe and picture. Please feel free to publish them if you wish. I must warn you,
if you do make a Curd Tart they become very addictive.

8oz or 220gm fresh kefir cheese [kefir-leben]
2Tbs fresh milk kefir-grains
4oz or 110gm Sugar
2oz or 55gm Currants
1 large (or 2 small) Eggs
1oz or 28gm butter (melted)
1 tsp grated lemon rind
1/2 tsp nutmeg
Shortcrust pastry for 7" x 3/4" deep flan tin

METHOD
Finely chop kefir grains with sharp knife on chopping board. Mix with the curds and the dried fruit and flavouring. Beat the egg and stir in with the sugar and butter. Line the dish with the pastry and put in the curd mixture. Bake in a moderate oven for 20 minutes or until set. Delicious hot or cold.
