Yorkshire Curd Tart or Cheese cake [minus the kefir grains Ad. Dominic] was possibly the forerunner of the American Cheesecake. I include the recipe and picture. Please feel free to publish them if you wish. I must warn you, if you do make a Curd Tart they become very addictive.

INGREDIENTS

Serves four

orange dot 8 oz fresh kefir cheese [kefir-leben]

orange dot 2 Tbs fresh milk kefir-grains

orange dot 4 oz Sugar

orange dot 2 oz Currants

orange dot 1 large (or 2 small) Eggs

orange dot 1 oz butter (melted)

orange dot A little grated lemon rind

orange dot A pinch of nutmeg

orange dot Short crust pastry for 7" Dia x 3/4" deep flan tin

METHOD

Finely chop kefir grains with sharp knife on chopping board. Mix with the curds and the dried fruit and flavouring. Beat the egg and stir in with the sugar and butter. Line the dish with the pastry and put in the curd mixture. Bake in a moderate oven for 20 minutes or until set. Delicious hot or cold.
